One company is looking to disrupt the Aussie plant-based milk market, with a novel product powered by artificial intelligen­ce. NotCo is a Chilean brand that has made it big in the States, and is now available for the first time in Australia. The alternativ­e dairy and meat brand uses an AI programme called Guiseppe to study the molecular structure of animal products, and then replicate them with plant-based alternativ­es, creating NotMilk, NotChicken and NotBeef. Starting in the Australian market with their plant-based milk, NotMilk is nut- and oat-free, and consists mainly of water and pea protein, along with a number of plant ingredient­s, such as pineapple juice, corn fibre, sunflower oil and even cabbage juice. The company will soon be rolling out more products, including NotBurger and NotChicken Nugget.
