One company is looking to disrupt the Aussie plant-based milk market, with a novel product powered by artificial intelligence. NotCo is a Chilean brand that has made it big in the States, and is now available for the first time in Australia. The alternative dairy and meat brand uses an AI programme called Guiseppe to study the molecular structure of animal products, and then replicate them with plant-based alternatives, creating NotMilk, NotChicken and NotBeef. Starting in the Australian market with their plant-based milk, NotMilk is nut- and oat-free, and consists mainly of water and pea protein, along with a number of plant ingredients, such as pineapple juice, corn fibre, sunflower oil and even cabbage juice. The company will soon be rolling out more products, including NotBurger and NotChicken Nugget.
