CRAVING-BUSTER TAHINI BALLS
MAKES ABOUT 16 SUITABLE FOR DAIRY FREE, GLUTEN FREE
1 cup desiccated (shredded) coconut, plus extra for coating 1 cup dried apricots, roughly chopped
½ cup tahini
¼ cup honey
¼ cup almonds, coarsely chopped
1. Mix all the ingredients together in a bowl. Taste and add a little extra honey if you like it sweeter.
2. Shape the mixture into balls, then roll them in the extra desiccated coconut. Transfer to the fridge to set, about 1 hour.
