ZUCCHINI, CUCUMBER & TOMATO SALAD WITH PESTO
SERVES 4-6 HANDS-ON TIME 20 MINUTES
3 zucchini, washed, top and bottom cut off,
and spiralised, julienned or grated 3 spring onions, finely sliced
½ head of small lettuce, finely sliced 1 Lebanese cucumber, finely sliced
Squeeze of lemon
1 cup baby tomatoes, quartered
¼ cup green pesto
¼ cup coriander or basil, finely sliced
½ cup macadamia nuts, roughly chopped Salt, to taste
1. Prepare the zucchini according to your choice, and transfer to a colander, pressing down lightly to remove excess moisture.
2. In a large bowl, combine the remaining ingredients and then add the zucchini, tossing carefully to coat with the pesto.
