1 quantity Sushi Rice (see recipe, page 136) 400g cooked crab meat (available
from fishmongers)
2 Lebanese cucumbers, halved lengthways,
seeded and cut into julienne sticks or 1cm dice 1 small carrot, cut into julienne sticks
or coarsely grated
80g avocado, thinly sliced or cut into 1cm dice 1 spring onion, finely chopped sesame
seeds, for sprinkling
Divide all the ingredients among 4 small shallow bowls and serve immediately.
