Our easy chocolate bark makes the perfect gift for friends and family

CHOCOLATE FRUIT CAKE BARK

MAKES 8 pieces HANDS-ON TIME 10 mins, plus chilling COOK TIME 5 mins

200g 70%-cocoa dark chocolate

1½ tablespoon­s flaked coconut, toasted

1½ tablespoon­s pecans, toasted, chopped

1 tablespoon dried cranberrie­s, coarsely chopped

2 dried apricots, thinly sliced

2 teaspoons pistachios, toasted, coarsely chopped

1 Line a large baking tray with baking paper. Melt chocolate in a heatproof bowl set over a pan of just-simmering water (don’t let the water touch the bowl), stirring well until completely smooth.

2 Pour melted chocolate over prepared tray, spreading to form an 18cm x 25cm rectangle. Sprinkle with coconut, pecans, cranberrie­s, apricot and pistachios. Press down gently. Refrigerat­e until set.

3 Carefully remove baking paper. Using a hot knife, cut chocolate bark into 8–10 pieces. Store in the fridge in an airtight container lined with baking paper.

CHOCOLATE MINT CRUNCH BARK

MAKES 8 pieces

HANDS-ON TIME 10 mins, plus chilling COOK TIME 5 mins

200g 70%-cocoa dark chocolate

½ teaspoon peppermint essence

1 tablespoon pepitas, toasted

1 tablespoon raw buckwheat, toasted

1½ tablespoon­s flaked almonds, toasted

1 Line a large baking tray with baking paper. Melt chocolate in a heatproof bowl set over a pan of just-simmering water (don’t let the water touch the bowl), stirring well until completely smooth. Stir in the peppermint essence.

2 Pour melted chocolate over prepared tray, spreading to form an 18cm x 25cm rectangle. Sprinkle with pepitas, buckwheat and almonds. Press down gently. Refrigerat­e until set.

3 Carefully remove baking paper. Using a hot knife, cut chocolate bark into 8–10 pieces.

Store in the fridge in an airtight container lined with baking paper.
