Delicious ways for peaches to star in savoury dishes this summer

One of summer’s treasures, fragrant peaches, are at their peak. And they don’t just take the leading role in sweet treats, like peaches and cream, but, like cherries, can take a star turn in savoury dishes as well. Rich in immunity-boosting vitamin C, fibre for a happy digestive system and carotenoid­s that support eye health, juicy peaches aren’t just tasty – they’re also really good for you. Here’s how to put a new spin on peaches this summer:

CANAPÉS Spread ricotta on crostini, then top with thinly sliced peaches, prosciutto and a drizzle of balsamic glaze.

SALAD Cut fresh peaches into wedges, add a drizzle of extra virgin olive oil and fry on a hot griddle pan. Toss the peaches through a simple salad of rocket, zucchini ribbons, almonds and fetta.

CHUTNEY Fry 1 sliced onion in 1 tablespoon extra virgin olive oil, then add 4 chopped peaches, 2 teaspoons yellow mustard seeds, 1 small red chilli (seeded and chopped), 1 tablespoon white wine vinegar and 2 tablespoon­s brown sugar. Cook until thick, then cool. Serve chutney with a spicy curry.
