GARLIC PRAWN COCKTAIL
Serves 4 Prep and cook time 30 minutes
16-20 Ocean Royale uncooked king prawns, shelled, deveined, butterflied, tails intact
2 tablespoons Remano Extra Virgin Olive oil 2 cloves garlic, chopped finely
2 cups shredded iceberg lettuce
2 small (400g) avocados, sliced 1 tablespoon Westcliff Lime Juice, lime wedges, to serve
1. Combine the prawns, oil and garlic in a medium bowl; stir to combine. 2. Cook the prawns in a heated frying pan (or grill pan or barbecue) until browned on one side; turn and cook until prawns are just cooked through. 3. Arrange the lettuce, prawns and avocado in serving glasses; drizzle with lime juice. Serve with lime wedges, if desired.
