Cos hearts with green goddess dressing

SERVES 6 AS A SIDE PREP AND COOK TIME 20 MINUTES

3 baby cos lettuce (540g) 1 medium avocado (250g) ¼ cup (75g) aïoli ¼ cup fresh dill sprigs

3 green onions, chopped 2 tablespoon­s extra virgin olive oil 150g bacon slices

Remove outer leaves from lettuce; discard root end. Cut each lettuce into quarters lengthways. Wash lettuce carefully; drain well and pat dry.

2 Blend or process avocado, aïoli, 1 tablespoon of the dill, the green onion, oil and ¼ cup (60ml) water until smooth; season to taste.

3 Cook bacon in a large non-stick frying pan over medium-high heat until browned; drain on paper towel. Crumble or tear coarsely.

4 Place lettuce on a platter, drizzle with dressing and scatter with bacon and remaining dill. Season to taste; serve.

Not suitable to freeze or microwave.
