Barbecued ocean trout

SERVES 8 PREP AND COOK TIME 20 MINUTES

1.2kg whole side fillet of ocean trout, pin-boned, skin on 1 teaspoon sea salt flakes freshly ground black pepper 2 tablespoon­s extra virgin olive oil

1 Heat a covered barbecue to medium. Line a large oven tray with baking paper; lay fish, skinside down, on top. Season with salt and pepper; drizzle with oil.

Transfer to barbecue and cook, with the barbecue lid down, for 15 minutes (for medium rare) or until flesh just flakes apart when pressed with a fork, or until cooked as desired. Alternativ­ely cook the trout in a preheated 180°C oven (160°C fan-forced).

3 Serve the trout sprinkled with soft herbs.

Not suitable to freeze or microwave.
