Finely chop the whites of 3 green onions; finely slice tops for serving. Combine 300g hot smoked trout flesh, 100g softened butter, 2 tablespoons lemon juice and 2 tablespoons pouring cream in a food processor until smooth. Slice 2 telegraph cucumbers into 2cm rounds. Top cucumbers with trout mixture and garnish with finely sliced green onion tops.
