This is a steely, focused sparkling wine. Aromas of melon rind, peach and a touch of honey are well complemented by the smoky, bready autolytic notes that come from 10+ years of ageing on its lees. Mouth-watering acidity lasts well into the long, savoury finish. A classic. •••

The sort of wine that jumps out of the glass to greet you! Bright and delicious; firm, green apples, melon fruit and sappy herbs mingle with notes of biscuits and freshly baked bread. Notably creamy and mouth-coating, with the acidity narrowing the finish to a lemony point. ••••

Some evolution here; still fresh and white-fruited, with hints of honey, orange peel and nuts on the nose. The sweet, autolytic characters of apple-pie are more prevalent on the palate, lifted by the bright acidity. A lovely expression of Chardonnay and ••• very different to most Cavas.
