What is a Levain?

Many recipes for sourdough bread call for a levain. Confusingly some European recipes call starter itself “levain” but here the term generally refers to the practice of making an offshoot of your starter, all of which gets incorporated and baked into bread. The simplest recipes skip this extra step altogether.
