The clocks spring forward an hour, the last snow melts, fuzzy green shoots start sprouting through the mud in town and countrysid­e… Spring will not be denied! Meanwhile, it’s anybody’s guess what the weather will be like, so we’ve put together a collection of delicious and versatile spring dishes that will work well on any occasion, whatever the temperatur­e outside. We’ve also transforme­d some classic cocktails into hot, flavour-infused drinks that are perfect sippers if there’s still snow on the ground. And because even the first glimpse of spring sunshine tends to make us all feel like turning over a new leaf, Lucy Waverman has created a healthy and delectably exotic entertaini­ng menu, with advice from nutritioni­st Leslie Beck.
