In a cocktail shaker half-filled with ice, combine 2 oz brandy, 1 oz freshly squeezed lemon juice and 2 tsp (10 mL) Simple Syrup (recipe follows) or sugar. Shake to dissolve sugar. Strain into a cocktail glass and top up with chilled cava. Garnish with a lemon twist.
