冬笋蒸腊味

冬笋去壳,修去老皮,切去老根,切成薄片;腊肉洗净,蒸15 分钟,取出切片;冬笋片放入开水锅中焯10 分钟,以去除冬笋的涩口感,捞出,加少许盐、糖,拌匀,一片片码在盘中;将腊肉码在冬笋上,撒上姜丝,放上浓汤(宝)块,上锅蒸 8 分钟;取出,撒少许葱花即成。

冬笋是腊肉的好搭档,两者同烹,咸香鲜自然融合,是冬季里的时鲜宴客菜。
