With a population of 120,000, the Dungan of Central Asia are descendants of Hui Muslims who fled China in the 1800s. Following Islam, cooking Chinese recipes, and speaking a Mandarin dialect written in Cyrillic, they have held on to their unique heritage despite the forces of modernization.
