www.ritzcarlton.com While ascending to the 102nd floor of The Ritz-Carlton implies a sense of occasion, there’s nothing uncomfortably formal about Tin Lung Heen. The soaring ceilings and full-height windows make it a touch more special than your normal family dinner, but as soon as you step into the restaurant, you’re made to feel like a regular, and the service feels genuinely cheerful. The menu has something for everyone, from humble family-style dishes such as steamed pork patty, to banquet staples such as steamed crab claw in egg white. Fun, nostalgic dishes like shrimp toast are available too. Everything is executed with perfection, although in the highly competitive world of Cantonese fine dining, a little more thought into the presentation could be considered. If you’re dining alone or in a small group, staff helpfully offer to halve portions where possible, and there are also a number of set menus worth considering, including ones paired with wine. The cellar is extensive, and holds some sought-after bottles, and non-drinkers can also explore the menu of premium teas, which come with helpful descriptions of where and how they’re produced.
