Samsen has remained remarkably consistent in its reputation as serving the best Thai boat noodles in town, and two years after its opening, the walk-in eatery still manages to attract a queue that regularly extends down the block on any weeknight. The interior evokes a typical Bangkok hole-in-the-wall with its chipped concrete shell and close-quarters dining, while Chef Adam Cliff and his team can be seen preparing for the night’s proceedings in a partial open kitchen. The menu is relatively succinct, but has no shortage of umami thanks to an expert blend of spices and aromatics. Wagyu beef—tender and succulent—plays a leading role, featuring in everything from stir-fries and fried rice, to Samsen’s signature boat noodles, with fermented tofu and watercress in the supporting roles. However, this culinary joint is not a place to linger—its minuscule interior, loud noise level and unforgiving stools urge you to slurp your noodles down, before vacating the table to the next party in the perennial queue outside.
