Yi is full of surprises. A bespoke, dailychanging dinner menu is tailored according to availability of ingredients available that morning, while chefs Wilson Fam and Angelo Wong collaborate based on their expertise in Cantonese and Chiu Chow cuisines. Courses are laid out without mentioning the ingredients. A double-boiled soup with fish maw, chicken and mountain yam nourishes the palate, while the deep-fried pork and shrimp stuffed sea cucumber with caramelised scallion sauce excels in complex combinations of flavours. A simple vegetable course with clams cooked in white pepper broth provides a light round up to the meal, followed by desserts.
