Italian fine dining from chef Angelo Agliano’s hometown of Sicily served with sweeping vistas of Hong Kong from the 102nd floor. There’s a meticulous Mediterran­ean focus on fresh seafood and Sicilian traditions, with chef Agliano creating balanced and brilliant dishes like his red shrimp paccheri. The wine list is monumental, with plenty of surprises like a full page of biodynamic bottles. Service is Ritz-Carlton competency and tact.
