TATLER SAYS
One of Hong Kong's most striking Cantonese dining rooms with pictureperfect harbour views, Yan Toh Heen is where executive chef Lau Yiu-Fai has spent more than 35 years mastering his craft. It shows in stellar dishes such as the double boiled fish maw and sea cucumber, golden stuffed crab shell or wok-fried wagyu served on a hot stone. Dim sum is another highlight, as are the barbecued suckling pig or some of the city's bird's nest dishes.
