Chef award for her work at Nobu—since then, she has only become stronger and even more determined to push the boundaries of dessert and pastry. As part of the founding team of Andō, Yuen has been able to complement chef Agustin Balbi’s gastronomi­c narrative with her own perspectiv­e, creating desserts rooted in nostalgia and presented with an almost avant-garde aesthetic.
