Among the many Italian restaurants in Hong Kong, few specialise in the cuisine of a region as well as Castellana. In focusing on the food of Piedmont—home to slow food and white truffles—Castellana has a depth of gastronomic treasures to draw from. The tasting menu changes with the seasons, but the signature homemade tagliolini carbonara always stays, and is a cheesy, eggy delight. The wine list is heavy on reds from the region, in particular Barolo and Barbaresco, the dining room is hushed and intimate, and service is informed and attentive.

Celebrity Cuisine, opened in 2007, is one of those restaurants that continues to serve a reliable, high calibre roster of Cantonese dishes to those in the know. With just over 40 seats, this tiny restaurant in the boutique Lan Kwai Fong hotel is a magnet for gourmands; the food here is still delivering on all fronts thanks to Cheng Kam-Fu, the amicable firecracker of a chef who has stayed true to his principles of executing superb Chinese cuisine.

The restaurant may be best known for its luxurious bird's nest stuffed chicken wing, but Fu Gor, as chef Cheng is known, lends his name to a signature fried rice that is humble but stunning.
