TATLER SAYS

The Peking duck, made the traditiona­l Beijing way, reigns supreme at Sha Tin 18. Diners have the option to enjoy this excellentl­y prepared dish three ways: a chef first slices the skin, breast and leg in front of the table—the skin is best paired with sugar. The second course then presents a minced version, paired with iceberg lettuce for wrapping. Finally, there’s a rich, aromatic duck soup, with Chinese cabbage and beancurd. The crispy roasted pork belly, and poached pork, cabbage and chive dumplings make for great starter and side dishes.
