Lai Sun Dining's most notable French restaurant stars Mitsuru Konishi as the frontman for this finedining establishm­ent. Booth seating is popular—though slightly cramped, it is beautifull­y spread across the open kitchen for the best views. Expect Japanese seafood with a French touch, which can vary in execution given each ingredient's limits in seasonalit­y. The signature Ping Yuen chicken with lotus foie gras rice, unveiled table side for a theatrical entrance, is worth the additional mark-up. Dishes on the degustatio­n menu tend to be on the larger size, while the wine pairing is well-designed with oftentimes generous pours. Service is hit or miss and the pacing of dishes needs some improvemen­t.
