If a wine bar could be formulated as a riposte to the conservative image of the wider world of wine, it would look a lot like Cut. Beyond its vinyllined walls and hipster crowd, the bar's offerings of natural, low-intervention and biodynamic wines, paired with Japanesestyle sandos that took the city by storm over the past year or two, are about as antiestablishmentarian as food and wine gets. Taking inspiration from Japan's listening bars, the music programme is the third pillar at Cut, where resident DJs spin tunes for newcomers and regulars alike.
