Okra Bar sits above the main restaurant, Okra Kitchen, situated along a quiet stretch of Hollywood Road and accessed through a single flight of stairs. The space is kept minimalist­ic— sterile white tiles dominate the décor—in order to draw all your attention to the food and drink. Chef Max Levy can most often be found up here, and the creativity and expertise in his craft makes for an excellent omakase experience that you won’t soon forget. Ingredient­s such as rich carabinero prawn is delicately paired with a smooth chawanmush­i, enhancing the natural flavours in the crustacean. Levy is also a trained itamae, and is a big proponent of ageing fish to coax out their optimum flavour and texture. Fattier fish, for example, may be washed in brine and then stored loosely wrapped in draughty conditions. Subject to seasonalit­y and availabili­ty of ingredient­s, the assorted nigiri sushi selection changes daily and allows for a fresh experience each visit. It is in the nigiri that the chef’s dedication to presenting the very best meal to his customers is apparent. Opt for the sake and wine pairing—the sake selections have been as carefully selected as the cuisine and each one will reveal an intriguing story to be heard.
