Located within the casino of Studio City Macau, Bi Ying is a convenient dining hot spot for guests playing the tables. The name refers to the Chinese characters for jade and an inviting ambiance, and the latter meaning is brought to life with an interior embellishe­d with golden accents matched with auspicious shades of red. Bi Ying excels in presenting bold flavours from China’s regional cuisines, stretching from Xinjiang to

Sichuan, Hunan to Beijing and even Canton. Dim sum-style dumplings and buns are made to order and available throughout the day; panfried peppered wagyu beef buns are beautifull­y made with a golden crust and juicy wagyu beef inside, highlighte­d with a sharp spicy punch from black pepper. The restaurant’s à la carte selection shows promising use of spices and heat, as demonstrat­ed in sharing platters such as the Xinjiang lamb skewers or Sichuan poached Mandarin fish slices with hot chilli broth. Bi Ying’s punchy flavours are accompanie­d by a selection of premium Chinese teas, although wines are in short supply, especially the by-the-glass options. The staff may not be as knowledgea­ble in wine pairing, and occasional­ly at peak capacity service tends to be a little slow, but staff remain friendly throughout.
