One of two elaborate Chinese restaurant­s at Wynn Palace, Andrea’s stands out with its opulent gold and ivory tones spun throughout the large dining space, embellishe­d with intricate butterfly and cloud patterns. The restaurant offers a wide range of Chinese regional dishes, most of them classics with a contempora­ry twist. Adding to the modern characteri­stics are the stylish presentati­ons and the abundance of globally-sourced ingredient­s, fittingly adapted into popular dishes. Notable selections include the establishm­ent’s marinated pork rolls with spicy garlic sauce, a playful take on the Sichuan classic that is reinvented by adding fresh vegetables. The rolls are light and refreshing with sharp heat from the spicy dressing. Wok-fried sweetand-sour hapuka showcases the scored fish fillet that is deep-fried with just the right balance of sweet and tangy glaze. A dish of 36-hour slow-cooked grain-fed beef ribs is a stunner. The ribs are gelatinous and juicy, but never too heavy. Guests can make their own wraps with the scallion pancakes served on the side. The dessert selection at Andrea’s may be modest, but the artisanal tea menu is exceptiona­l, with a resident tea master offering suggestion­s to pair according to guests’ preference­s.
