Mizumi is located right on the gaming floor of Wynn Macau, and like the rest of the hotel the décor is decked out in mainly lucky colours of gold and red. An eightseate­r sushi bar greets diners, while there are also more private seats located in the teppanyaki room and tempura room—Mizumi has employed three master Japanese chefs to oversee each section and so everything is done with great care and attention to detail. No money is spared to gather the right ingredient­s together for the menu; for example, spring water in Japan is imported to cook the sushi rice, sashimi is imported from Tsukiji market in Tokyo, and the beef comes from a private ranch on Ishigaki Island, south of Okinawa. This is the kind of place where even listing the provenance of the garlic (Aomori, if you must know) is important and, perhaps unusual for a Japanese restaurant, vegetarian and vegan menus are available upon request. Service is stellar— our waitress was attentive and incredibly knowledgea­ble about the menu, offering recommenda­tions when prompted but never intrusive. The sake list too is extensive, and diners are encouraged to select their own preferred glassware from a platter of custom-blown options.
