Don’t be fooled by The Apron’s fairly odd location in the middle of Galaxy Macau’s shopping centre—it may look like a casual stopover type of restaurant, but it offers a solid menu that features quality internatio­nal produce and suitable for gatherings as well as an indulgent dinner for two. The focus here is on seasonal and natural produce, and it’s worth going for the great selection of oysters alone; the bivalves are jet-fresh and shucked to order with a selection of accompanyi­ng sauces to choose from, including a red onion shiso salsa and nam jim, to name a few. Other stars on the menu include steak—they serve a variety of cuts from reputable farmers such as Wakanui in New Zealand and Darling Downs in Australia— which are dry-aged in house and cooked over beech wood flames in an open kitchen. The Brandt Family 365 Days alfalfa- and grain-fed sirloin is from cattle raised responsibl­y and with care, and the steak comes perfectly cooked. The well curated wine list and knowledgea­ble staff are definitely a plus.
