Taiyo No Ta­m­ago man­goes, thick with flesh and juices burst­ing, served with Hokkaido milk ice-cream, or amadai with its scales on, made crispy and served with an umami-bomb sauce of sun­dried toma­toes, shio kombu and but­ter. Some dishes have al­ready be­come clas­sics, such as the uni gen­er­ously piled on their cloud-like toasted brioche. For veg­e­tar­ian eaters, the restau­rant now of­fers an equally sea­son­ally-aware plant-based menu. The wine pair­ings are well thought out, with some un­ex­pected bot­tles, but if you’re only af­ter a glass or two, the ra­zor-sharp som­me­lier can help you out.
