2/F, The Pot­tinger, No. 74 Queen’s Road Cen­tral, Cen­tral, Hong Kong TEL: +852 2668 6488 www.glob­allink.com. hk/tavie “Pure, sim­ple, sea­sonal.” Those are the words that Chef Hideaki Sato hand-writes on each of Ta Vie’s tast­ing menus for the evening— a beau­ti­fully el­e­gant sum­ma­tion of the phi­los­o­phy be­hind his food. Nev­er­the­less, that doesn’t quite pre­pare you for the sheer bril­liance of Sato’s cui­sine; mar­ry­ing the finest Asian in­gre­di­ents with pre­cise French tech­nique, all topped with a hefty dose of cre­ativ­ity and so­phis­ti­ca­tion, each of his dishes ex­cites, in­trigues, sur­prises and sat­is­fies in equal mea­sure. The pre­sen­ta­tion of each course is ex­quis­ite (to reveal more would spoil some of the thrill) and the taste even more sub­lime. The open­ing dish of Ke­gani crab and av­o­cado cock­tail demon­strates Sato’s mas­ter­ful com­mand of flavours, with a black vine­gar dress­ing that in­jects an ex­pert­ly­judged acid­ity to pro­ceed­ings, whilst Lung Guang chicken con­sommé el­e­vates com­fort food to lofty new heights thanks to some of the most de­li­cious won­ton-in­spired dumplings we’ve ever eaten. The drinks list is just as thought­ful, with an ex­ten­sive se­lec­tion of un­usual Asian wines and cock­tails made from lo­cal wet mar­ket in­gre­di­ents. Ta Vie’s stel­lar ser­vice slots in seam­lessly too, be­ing warm and un­ob­tru­sive.
