Tak­ing into ac­count the sig­nif­i­cance of har­mony, the calm­ing in­te­ri­ors from Ilse Craw­fod add green­ery to the din­ing space, while dec­o­ra­tive brass-pat­terned win­dows in­vite nat­u­ral light that bright­ens up the room; Hong Kong-in­spired art pieces line the perime­ters of the restau­rant as sub­tle ref­er­ences to the restau­rant’s com­mit­ment to cel­e­brat­ing lo­cal her­itage. This phi­los­o­phy ex­tends to the menu, which stays true to blend­ing the old and the new, util­is­ing in­no­va­tion through in­cor­po­rat­ing pre­mium in­gre­di­ents with new tech­niques. The kitchen man­ages to main­tain the ap­peal of the clas­sics by rein­vent­ing them in new ways, such as bar­be­cued Iberico pork with honey glaze, or a pan-fried scal­lop with gin­ger­scal­lion egg whites and black truf­fle—sta­ples where guests can still see the essence of Can­tonese cui­sine, pre­served by the team’s culi­nary mas­tery.
