L’Atelier de Joel Robuchon always proves gastronomi­cally fulfilling, but have the staff been told to maintain an expression­less composure? Despite being able to recommend dishes and pick appropriat­e wines, the emotionles­s service is somewhat at odds in this esteemed establishm­ent. Luckily the same cannot be said for the food, which is a delight throughout, beginning with the outstandin­g bread basket, and culminatin­g in the airy yet indulgent chocolate soufflé. Here, the flavours and presentati­on are always on point, whether it’s the picture-perfect and palate-pleasing langoustin­e ceviche served with a sea urchin waffle that’s beautifull­y buttery, or the freerange quail with foie gras that’s tender and moist and accompanie­d by the creamiest mash. Every element has been carefully considered; each flavour is complement­ary to its peers. The wine list is comprised of around 3,400 labels and includes some seriously impressive bottles, many of which will make rather a serious dent in the wallet.
