It seems only fitting that as you gaze upon a magnificent view of Hong Kong’s harbour, you feast on some of the finest offerings the ocean has to offer—and Rech by Alain Ducasse really does showcase the fruits of the sea in style. Interior-wise, this Hong Kong outpost of Ducasse’s Parisian Rech restaurant is the visual equivalent of a tall drink of water, with undulating clean white lines and sun-bleached tones, a gorgeously airy ambience, beautiful marineinspired tableware and floor-toceiling windows that make you feel like you’re dining on the waters themselves. Its tightly-edited menu shifts with the seasons but always focuses on fish and seafood; whether it’s something simple like whole pan-seared sole served with an indulgent butter sauce and expertly de-boned at your table, or something more creative like a “club” crab mango appetiser that playfully riffs on the club sandwich, Rech is all about immaculate preparation and technique that lets the ingredients shine. Its wine list is intimidatingly large, with French varieties a particular speciality, but the restaurant’s extremely knowledgeable and helpful staff are on hand to offer advice.
