Aqua undeniably has one of the most breathtaking restaurant settings in Hong Kong thanks to its unhindered, panoramic harbour view, and that may have a large part to do with its longevity. However, service by the waiters was indifferent and heavy-footed throughout, in some ways a reflection of Aqua’s stance against white tablecloths and apparently diners’ expectations of what should come as part of the restaurant’s sky-high prices. Thankfully, the food was up to par, bursting with flavour and exquisitely plated—no doubt to match Aqua’s already high level of Instagram readiness. Rife with flavour, the smoked whole lobster is presented in dramatic fashion in a container filled with thyme smoke and accompanied by seafood mousse parcels with caviar. We recommend skipping the eye-wateringly pricey a-lacarte menu and go for the omakase course for its better value. The wine list is extensive but short on offerings by the glass and mostly limited to pricey premium bottles; opt for the creative cocktails upstairs instead.
