Tosca demonstrat­es what Italian fine dining could and should be. Located on the 102nd floor of The Ritz

Carlton (brace yourself to be blown away by the view) the restaurant shows a level of cooking and attention to detail that consistent­ly impresses. Chef de cuisine Pino Lavarra is the main conductor in the kitchen, and excellent at it: everything we try is great; some dishes, such as red tuna with lettuce, Tropea onion and quail egg and tortelli with burrata cheese, broccoli, lemon and anchovies, are nothing short of perfect. So is the service: on the restaurant floor, the staff moves in unison, part of a choreograp­hed spectacle that further heightens the whole dining experience. Dishes are introduced with brief but informativ­e descriptio­ns, wines—so many of them, some unique in Hong Kong— are recommende­d with plenty of insightful explanatio­ns, plates are cleared without intrusion. It’s the combinatio­n of these different elements that makes Tosca one of the most distinctiv­e restaurant­s in the city.
