Dining in this institution of an Italian restaurant is memorable on every point, from the genuine service to the dishes on the menu. With ornate mustard walls and candlelight, the dining room in Hong Kong—one of three in the world, with the first Sabatini restaurant having opened in Rome in 1954—offers an elegant, intimate setting within which to enjoy its dishes. The grilled octopus and scallop salad with tomato concassè, pesto and olive oil caviar is reminiscent of the seaside—a fresh, solid starter setting the bar high for the mains to come, which thoroughly deliver. We recommend the linguine alla Sabatini, perfectly al dente and homey; and the slow braised veal shank with saffron risotto and gremolata, which prove unforgettable throughout the evening. The perfectly paired wines, along with the live band round out the idyllic dining experience, where Sabatini’s quarter-decade run is understood once napkins are folded and seats are slowly returned to the table.
