From 17 Feb, Maison Ikkoku’s ground floor space converts to Sling, a Singapore Sling and Peranakan concept. Five variations of Singapore Slings include the Original ($26), harking a return to using Cherry Heering and juniper forward gin, Independen­ce ($25) with addition of Campari for a spirit forward bitter, dry creation, and Coco ($28), served refreshing­ly in a whole coconut. Founder Ethan Leslie Leong has also created a menu of elevated Singaporea­n cuisine in homage to his grandmothe­r. D.I.Y Popiah ($36, vegetarian) brims with beansprout­s and turnips, while the Hey Mee ($38) Hokkien noodles with rock lobster steals the show as it is flambéed tableside.
