Balsamic berries
• 250g mixed berries (or fruit)
• 2 tbsp caster sugar
• 2 tbsp white balsamic vinegar
} Mix all the ingredients together and let them macerate. Just before serving, taste and adjust by adding more sugar or vinegar.
} To assemble, remove the semifreddo from the freezer and transfer onto a wide plate or platter. Let it thaw gently in the fridge till it’s easier to manage. Slice to your desired thickness, then serve with the balsamic berries.
