Buy firm ricotta from the deli or greengroce­rs sold in draining baskets. The smooth ricotta sold in tubs has a runnier texture and has not had the excess whey strained off. TO FREEZE GNOCCHI place uncooked gnocchi in a single layer on a foil-lined baking tray; freeze for 1 hour or until individual pieces aren’t sticking together. Transfer to airtight bags. Freeze for up to 1 month. Gnocchi can be cooked from frozen.
