CRISPY SOY MAPLE TOFU

3 tablespoon­s coconut/olive oil or ghee

300g packet firm tofu, sliced into 1cm-thick pieces 2 tablespoon­s gluten-free soy sauce

1 tablespoon pure maple syrup

1 teaspoon toasted sesame oil freshly ground black pepper cooked greens (such as bok choy, broccoli or asparagus) cooked jasmine rice, to serve lightly toasted sesame seeds and coriander

leaves, to serve (optional)

Heat a large heavy saucepan over medium heat. Add oil, then tofu pieces, spaced well apart. Cook for a good 4–5 minutes, or until golden, then flip over and cook until crispy. Reduce heat to low, then quickly add soy sauce (carefully, as it will splatter!), maple syrup, sesame oil and black pepper. Continue to cook, turning tofu a few times, until the sauce has reduced and the tofu is deep brown. Serve tofu and its sauce with cooked greens, jasmine rice, sesame seeds and coriander.
