APPLE & ROSEMARY CLAFOUTIS Replace pears with 2 Granny Smith apples, peeled and thinly sliced. Fold 1 teaspoon finely chopped fresh rosemary leaves through the batter before pouring over apples. Omit sea salt flakes.

CHERRY & VANILLA CLAFOUTIS Replace pears with 250g (2 cups) pitted cherries and increase vanilla extract to 2 teaspoons. Omit sea salt flakes.

APRICOT & THYME CLAFOUTIS Replace pears with 6 apricots, halved and stones removed. Scatter the topping with 2 teaspoons roughly chopped fresh thyme leaves before baking. Omit sea salt flakes.

PEACH & RASPBERRY CLAFOUTIS Replace pears with 2 ripe peaches, sliced, and a handful of fresh or locally grown frozen raspberrie­s. Omit sea salt flakes.
