Regular Cuisine readers will need no introducti­on to Emma Galloway, whose accessible vegetarian, gluten-free and largely dairy-free recipes and photos have filled our pages for several years. Her third cookbook is, as the title tells, chock-full of her favourite recipes to meet your everyday cooking needs, from ‘get dinner on the table right now’ to dishes that can be made ahead, and baked goods for your sweet moments. With plenty of gentle encouragem­ent, Emma takes the ‘too hard’ out of cooking for those for whom vegetarian and gluten-free food is a choice or a need, and for the very many of us who love nourishing, winning dishes that spark with new ideas and refreshing flavour combinatio­ns. As a former pastry chef, you can bet Emma has nailed the baked goods on offer and, as in other sections of the book, many recipes give a basic method for you to add to as your fancy turns, swapping out the fruit or veges or spices with whatever is in season or just what you have (would that we all had a vege garden like hers to pick from – but even my patio pots can contribute). Plenty of Asian flavours pepper through dishes for simple dinners such as tofu bún chū and a Sri Lankan-inspired weeknight curry. Family favourites such as burgers, lasagna, nachos and mac and cheese get a look in, too, with recipes that won’t turn you inside out with complexity but will fill your every day with food that is wholesome, uncomplica­ted and so good.
