Persimmons thankfully offer that burst of colour and honey sweetness in the winter months and prove that nature isn’t so cruel. The pleasant blend of sweetness, tannins and juiciness make them ideal for both raw and cooked applicatio­ns. If they feel rock hard, wrap them in newspaper for 3-4 days to soften and get the best from them.
