EASY ON THE EYE

SERVES 1

1-inch slice cucumber

5 mint leaves

15ml sugar syrup

45ml Tanqueray No.10 Gin 15ml St Germain Elderflower Liqueur 20ml fresh lime juice

30ml Champagne cucumber disc, to garnish

Muddle the cucumber and mint with the sugar syrup, add the rest of the ingredients and shake with ice. Strain into a Nick & Nora glass and garnish with a cucumber disc.

SUGAR SYRUP

1 part caster sugar 1 part water

Mix to dissolve.
