The restaurant’s focus on fresh produce is heightened by the impressive floor-to-ceiling displays—as seen in the temperatur­e-controlled seafood room, which is home to a wide selection of fresh seafood, seafood antipasti and marinated fish. A steaming bowl of the hearty seafood laksa broth, filled with your choice of noodles, vegetables and seafood treasures, is a must-have. But the highlight here is the charcoal grilled-to-order cuts of meat such as the tomahawk steak and seafood. The catch of the day—a choice of Mediterran­ean sea bass or golden pomfret, on our visit—features ultra-moist fish with incredible flavour and freshness. Out-of-town friends can get acquainted with authentic local dishes such as the Hainanese chicken rice, black pepper crab and Singaporea­n char kway teow. Leave space for dessert with the assortment of nonya kuehs and Western cakes and tarts—but if you only have room for one, the tiramisu offers a strong coffee kick.
