Opened in 1982, a steady stream of diners continues to be drawn to Hua Ting’s broad repertoire of classic and modern Cantonese dishes, which it prepares with time-honoured finesse. Its elegant setting was refurbishe­d in December—a modern uplift that also marks the restaurant’s 35th anniversar­y. Among its most popular dishes is the crispy roasted duck, which has much of the fat rendered off to yield crispy, caramelise­d skin and juicy, tender meat. Seasonal dishes bring out the best of the fresh produce available, prepared in myriad cooking styles by an experience­d culinary team helmed by master chef Chung Lap Fai. Service is cordial and attentive, with the assigned waitstaff adept at recommendi­ng dishes to suit almost every palate and dietary preference. As with most Chinese restaurant­s of its calibre, however, the bill scales steeply upwards after the inclusion of seafood dishes, based on the seasonal rates.
