Chef Martin Foo has done admirably to present a contemporary take on fine Chinese dining with inventive ideas that hit the right note. The Dim Sum Symphony is a palette of four different kinds of dim sum, modernised and elevated with special ingredients—think lobster in har gow, truffle on top of siu mai and squid ink in dumpling skin, all of which work quite wonderfully. The Peking duck wins major points for expanding the taste repertoire of the classic dish, with inclusions such as avocado, foie gras and homemade sesame hoisin sauce; the meat is then diced and stuffed into mini crispy cones that you eat with your hands.
