Chef Martin Foo has done admirably to present a contempora­ry take on fine Chinese dining with inventive ideas that hit the right note. The Dim Sum Symphony is a palette of four different kinds of dim sum, modernised and elevated with special ingredient­s—think lobster in har gow, truffle on top of siu mai and squid ink in dumpling skin, all of which work quite wonderfull­y. The Peking duck wins major points for expanding the taste repertoire of the classic dish, with inclusions such as avocado, foie gras and homemade sesame hoisin sauce; the meat is then diced and stuffed into mini crispy cones that you eat with your hands.
